A Steak is a flat cut of beef, usually cut perpendicular to the muscle fibers. Steaks are usually grilled, pan-fried, or broiled. Rarely cooked means that the meat appears pink in colour as it has not been cooked fully all the way through.

The more tender cuts from the loin and rib are cooked quickly, using dry heat, and served whole. Less tender cuts from the chuck or round are cooked with moist heat or are mechanically tenderized (cf. cube steak).

Beef is the culinary name for meat from bovines, especially cattle. Beef can be harvested from cows, bulls, heifers or steers.

Beef muscle meat can be cut into steak, roasts or short ribs. Some cuts are processed (corned beef or beef jerky), and trimmings, usually mixed with meat from older, leaner cattle, are ground, minced or used in sausages.
